Take up as much as you can to make the work space easier to move around and carpet easier to lay. Front seats, sofa, maybe the dinette (if you have one), etc.
If there are non-removable cabinets on top of carpet, just cut around them with a razor knife or carpet knife. Have plenty of spare blades - they dull quickly and a dull blade is just plain hard to use. A carpet knife is just a specially shaped razor utiliy knife and I don't find them superior, but you can get one cheap enough on Ebay.
If you have a flush floor slide, you need to get the carpet under the lip and the slide carpet has a flap that needs to be professionally bound (most carpet shops can do it or refer you to a shop that does).
There will be a zillion staples to pull! You don't need to put that many back in!
adamfolger's advice about using the old piece as a pattern is good. Just make sure you cut the new piece large enough! Err on the side of extra rather than too small.
