We use a little cheap level on the floor right next to my drivers seat. Level it and then check the shower door. If the shower door works perfectly, our unit is level...

I use a couple of small bubble levelers from Camping World installed right next to the control panel. One is installed front-back, the other left-right. I auto level and then adjust manually.
I only adjust manually if I plan to be in a location for more than a few days. I've found that introducing a small amount of front end up allows water (rain or morning condensation) to run off the back of the coach and the tops of the slide outs. This technique only requires a very small amount of nose up and keeps the run off and streaking in two places at the back instead of all over the coach. Our bathroom door closes itself but we actually find that to be a benefit.

I leveled the coach one day, working my way from the freezer floor to the counter tops, then to the floor. When I was happy the coach was as level as I was going to get it, I mounted a small round bubble level on the console to the left of the driver's seat - within easy sight of the driver. I use it when pulling/backing in to a site to try and get the coach to something as close to level as the site will allow. Then use the jacks/leveling system to finish up.

How anal accurate do you want to be? Most recommend starting with the inside fridge as that is most affected by level of coach if it's an absorption style . Then as stated pick another reference point (counter, front of coach etc.) after getting the fridge set for easier location. These levels can be re-zeroed in case the easier check point you choose is not at the same level as the fridge.

I use a 4 foot level. I leveled to the floor and found my kitchen table also level. That's what I use now. Works great.

We also noticed that if it is level on the floor the counter top is also. Makes it easier to see the little torpedo level we use. Close enough is good enough unless like everyone else the bathroom door swings open or shut.

There's also an App for that. Called Carpenter, it's got a plumb bob level which is accurate to .1 degrees in any direction. Works very well, easy to see and use, and is free.

I would use the floor as a reference, although in my case the kitchen counter is also level with the floor. I would also highly recommend you use a long level, at least 24" long. The little 6" cheapie levels are not very accurate. It's hard to find any two of them that agree!

The most important thing is getting the fridge level. It needs to be level to work efficiently and it won't work at all if it gets too far out of level.

It's not just a matter of efficiency. Operating out of level can cause irreversible damage to the cooling unit.

For the Norcold refrigerator, they can be up to 3 degress side to side off-level, and 6 degrees front to back off level.
Since my refrigerator sits against a side wall, the side to side is the front to back of the motorhome. I'm not sure, but I think 3 degrees is about 8 or so inches (someone help with the math) and 8 inches off level front to back would be uncomfortable to walk around in the MH. Another rule of thumb that some go by is that if you are comfortable walking around in the MH, the refrigerator will be okay.
My driveway has about an 8 inch slope regarding the axle span. From top of driveway to bottom is about 16 inches but the only part I'm concerned about is the distance between the axles. So, I use 3 wood ramps under each front wheel to get it "near" level. Never had a problem.

That's the way we do it. Our bathroom door is in the middle of the coach and swings easily. It's the simplest way to tell if we're level. It's very close to our fridge too, so if the door is level, our fridge is level. Goodness all around.

Be sure to check any bulls eye bubble levels for being truly level. I've bought some that when placed on a known level surface, the bubble was off center. The problem was due to little stubs on the under side of the level that were not equal height.
