After running 5th wheels for the past 25+ years I finally ripped off the bandaid and bought an 07 Newmar 3761.... How much trouble am I in for?

Do at least the recommended maintenance!!
If you cannot prove it has been done, do it yourself or get it done.

People and coaches get in trouble when they are ignored.

Jwe123, welcome to the neighborhood!
Congrats on your new toy
Like noted above, you will enjoy the "new" view out the windshield.
