Your best bet is to ask your questions on http://tiffinrvnetwork.com. If you haven't visited, this is a Tiffin owners site and full of information. Once you have registered, use the search function. If you can't find your answer, post your question. A bunch of very knowledgable owners will be happy to help.

Good heavens! I have to ask why you would need to replace the whole heater on a 2007? There isn't much to go wrong with them and they should last 20+ years even in steady use.

The new ones normally come with installation instructions and you can just reverse them to take the old one out, if you use the same brand.

Unless you let it freeze and it has split the tank I doubt the tank has developed leak at the welds. Before I would just replace the unit, did you air pressure test it? You could also have a plumbing leak dripping from above the WH that makes it appear as if the tank is leaking.
