Steering issues
If an RV is the biggest vehicle you have driven you will have to accept that it will not handle like a car or even a pick-up. Just as a full-size sedan doesn't handle like a small sports car.
I still believe that getting some weight off the rear will help. Ideally, the actual weight as a % of GAWR would be similar both front & rear. ( maybe 85 to 90% of GAWR for each).
For safety and tire like I would certainly get all axle loading below 100% of GAWR.
With the load adjusted and the pressure set for the new measured load, you should feel some improvement. Don't forget that "4 corner weights" should be on your "To-Do" list as you could have some significant side to side weight unbalance which would also add to the less than desirable steering response.
Shocks, Alignment and close inspection and possible replacement of steering components might all improve things a bit but you will never get steering in a car. You also have to remember you are driving a "billboard" down the road with a high center of gravity so side loads from road slope or curves or wind also can give a feeling of poor control.
