.....most people still have the absorption refrigerators which are cooled by burning propane with a 12 volt controller, the inverter won't does not come into play. As designed, it's not so much a risk as it is a necessity.

Shut propane for winter storage. On the road, shut down fridge for fueling and whenever we stop and are out of level. Made a little reminder sign I throw on the drivers seat to remind me to turn it back on again.

I leave the propane when ever I travel. I also use my furnace at the times I travel in the winter months.

The guy who fills the tank, turns mine off. I turn it on.
A tunnel worker watched me turn it off at a tunnel entrance in Norfolk VA.
You would think they would have a place to turn it back on, like the Chesapeake bridge/tunnel has.

Keep my propane on all the time because of fridge. HOWEVER: Wish there was a way to at least turn the propane off for stove... I've accidently turned on a burner by rubbing against a burner valve. The smell quickly alerted me. But this is a problem. I want/need a stove shut-off valve for safety.

There are 2 ways to do what you want.
You can install this.

Or replace the whole stove with one designed for a boat. They have thermocouples in the burners.
When you light the stove, you need to hold the knob on for a few seconds, until the thermocouple gets hot, otherwise the gas will stop flowing.
They can't be accidentally left on, and will stop the gas flow, if the flame blows out.

My absorption fridge will not stay cool for 6 hrs while driving. It can be powered by either propane or AC electrical power. So I plugged the fridge into an outlet supplied by the inverter so it always has power. I always turn the propane off while driving, no reason to leave it on.
The engine alternator provides more than enough DC power to recharge the house batts while driving with the fridge on the inverter.
