We do have an in-motion satellite dish the spends a lot of time searching for bell satellites.
Winnebago didn't add the "Trickle Start" till the '05 model. This means the engine battery is not getting charged from the inverter. Add a Trick L Start and that part of your problem will be fixed. Sounds like your inverter isn't working properly.

While not a diesel, I have an Itasca Spirit class C motorhome, and with it plugged into shore power full time, the chassis battery will still go dead if the rig is not driven. A Battery Minder solved that entirely. You house batteries are another level of troubleshooting entirely. Good luck!

If your boondocking, watching the old style TV with the satelite dish can run the house batteries down quickly, and if there is a cross connection like mentioned above then the chasis batteries run down even quicker. Did you keep a check on water level in the house batteries? The inverter has a power switch and a breaker on it that may be triped. When you plug in to shore power do you imediately hear the inverter turn on? ours does. By the way Excellent choice of Moho!

If you have a large converter/inverter and you turn it off it can not charge the batteries, On my prosine there are 3 switches, one on the unit itself must be on, two inside (well 3 inside but one controls the display) the "CHARGER" must be on or it can not charge.

The converter may be on a GFCI chain or if you are turning off breakers may be on a breaker you turn off

The converter may be toast.

And the #1 cause of this type of problem... No 120vac at outlet you are plugging trailer into.
