There are great ideas here. We would mostly underscore them. Nashville has some good parks on near Opryland that would be convenient for shows and downtown as well.
X2 on Renfro - lots of regulars there that are fun to talk to. Fantastic show on 4th of July.
River Plantation in Sevierville is convenient for all sorts of stuff including Gatlinburg if you haven't OD'd on it. (Mayfest will be there, I think)
Apple Valley near Asheville is a fine park. Also over toward Cashiers there is a good park and several in the area between Atlanta and Asheville on US 23.
We think a cool trip would be Nashville, The Bourbon Trail, Renfro, and then Asheville/Biltmore. (There is a lot to do in Asheville besides the Biltmore)
On the way home, Savannah is good but we like Brunswick even more and of course St, Augustine.
Sorry for the issues that are leading to the trip. Make it memorable.

Well my wife just decided she wants to go to Cherokee North Carolina. Does anyone have suggestions on rv parks there?

Cherokee is nice. We enjoyed the KOA there, nice park. They have Indian licensed trout fishing at the front gate if you would like a fresh trout dinner. The KOA is a nice setting and out of the down town area.

Tom, one thing that was enjoyable, if you like Native American history, was the show put on at the Cherokee Museum, "Trail of Tears" IIRC, you'll like the Casino
Now that you have reminded me, we might have to do Cherokee again on the way home this year.

One area not mentioned by others but in the same direction is the Red River Gorge area of Kentucky. The OP mentions hiking and it's a wonderful area with fantastic views similar to out west. I'd suggest looking it up on Google. A friend tells me there are campgrounds there but we went "pre-RV" so I can't attest to that.
