Booth dinette/table and chairs
If we were to find and purchase "the" coach but it had the table and 2 stick chairs which we do not want, do any of you know:
1. can you remove the table/stick chairs set up and install a booth dinette (maybe even one that converts to a sleeper) and
2. anyone who does the work in the Texas/La./Arkansas/Miss area?
Would hate to turn down the 'perfect' coach for one item that could be changed.

If it has to do with RV furniture these guys can do it
RV Furniture from Villa International
just give them a call and tell them what you want to do. I would even bet that they could point you in the right direction for an installer.

Not in the area you requested, but Entegra tells us that Precision Paint does customization also. If you don't have any luck with someone close, give them a call. If you take a look at the thread showing improvements to Entegras, there is a beautiful example of some work they did on a Cornerstone. If they can do that, swapping out a table for a booth should be a piece of cake.

Texas Custom coach in Pipe Creek, TX. Very happy with some work they did for us on a previous coach.

Going from a booth to a freestanding table is done all the time, should be able to go the other way.
Now if you could find someone with the same interior colors and work out an exchange!

Agree with comment above. Check all the RV places in your area to see if they removed one and have it in storage. I removed and reinstalled dinette for new flooring. Pretty easy. Good luck.
