I've never seen or heard of a better primer on hitch setup than this one:

How to properly set-up a weight distributing hitch

Our 2016 4WD 2500 Ram is TALL! The trailer is level at bumper height, meaning the receiver part of the hitch actually turns upward when connected. What we deal with is the tailgate hits the trailer ball when connected. I've got an extended shank that I'm going to use.
I think that you will need to hook the rig up to determine the correct set up.

In addition to resting heights, it depends upon how much the rear of your truck sags when the WDH is dialed in.

If I had to invert the shank to raise the hitch head, the tailgate would have hit it when lowered. Luckily I didn't have to do that, but the hitch head does sit right at the top. The trailer does ride 1-2" lower in the front but that's ok.

If that't the trailer you want I think you should wait until you get it home then load it up how you'll usually travel. When I pulled mine home empty it was set so the truck and trailer rode level but when we got our belongings in it I needed to make some adjustments to the head angle rather than the ball height to give it a bit more lift.

Our Creekside 23RKS sits high as do many ORV units. I have a piece of foam that I put on the ball/hitch to protect the tailgate every time I open it. Hence if we are parked for a couple days the hitch comes out.

Our Creekside 23RKS is also a high rider with a high hitch. We needed to be able to open the tailgate with the trailer hooked up to the truck, so I lowered the front of the trailer hitch. Works great.
