The biggest thing to worry about is the road conditions. You can head south from Spokane through the tri cities and through the blue mountains down to Boise and then catch up with the 15. Or you can take 90 to the 90/15 interchange near butte. Both ways take about the same time: 4th of July and independence pass can suck but the blues aren’t much better. When you are heading from Vegas to Phx the 40 freeway can have snow as well.

You could have snow which ever way you go. I too would recommend (Salt Lake City) I-15 to Las Vegas. But instead of taking I-15 through Vegas I'd take the by pass around the west side as I-15 near the center of town is under construction. (I traveled from SLC to Vegas last week) Then Vegas to Kingman on 93, and East on I-40 to 93 to Phoenix Or 95 from Vegas to I-10.

An area of snow concern between SLC & Vegas is Beaver, UT.
