G'morning from Mystic Lake. We're originally outta Duluth, but sold out in 05, bought a rig and have been full timing ever since. Now residents of S.D., my wife's home.
The Canadian trip you're describing is one of our favorite trips, cept for Alaska, but you'll really enjoy it.
Would suggest leaving Mpls. and heading over to Door County (Greenbay area), then up to St. Ignace (Mackinac Island, etc.), then pick up the trans-Canadian at Sault St. Marie for your trip East. The N. Shore of Lake Superior is...o.k.,....but there's so much more interesting stuff along Lake Mich. N. shore and up into Canada.
We'd really suggest a few days in Ottawa to visit Parliment area, and would also suggest skipping (driving through) Montreal. Just a big city and you'll enjoy Quebec City SO MUCH more. At Quebec City, park your rig at one of the campgrounds (like Bernieires campground, just W. of jct. of 20 & 73, S. of river) and drive into old town for a day and also spend an evening in old town....magical). Also, consider taking a day trip NE out of Quebec on the N. side of St. Lawrence up to Tadoussac on Route 138. Fabulous scenery, free little ferry over fjord into Tadoussac where ya want to walk the boardwalk around point. Easy day trip ya won't forget and back to camp at Quebec.
When leaving Quebec City, unless ya want to drive route #73 down into Maine, we'd suggest running down to just S. of Sherbrooke to stay at Camp de Compton, or the Caticook area before moving S. into Vermont. Great flavor of rural French countryside. (Do you speak French??...it'll help).
