We were there just last week. Lots of fun. The rent-a-horses are located at Ft W. You do not need a bike to get a ride to another park, but it would be okay to get around the CG. They have buses that go around the CG. Just about everyone has/rents a golf cart now. I would nix on the fishing at the CG. Saw how they do it. Try www.MYFWC.com (Game and Fish Comm)and have them give you some names of fishing guides outside the CG--if you really want to catch some fish. Use my direction in a post below to get to the CG.
