I'm familiar with Williston Crossings. I emailed the owner a month after they opened and he called me on the phone. We stay in Crystal River in the winter and when we went to Florida we took a ride up to Williston Crossings. Williston Crossings is under construction but they have phase one open. This is going to be an RV resort and currently the rates are very reasonable. The owner gave me a couple free nights but we did not get a chance to use them. When we were there last winter there ware about 25 RVs there. They have the nicest laundry room I have ever seen in a campground. I certainly would stay here before I would stay in Starke. Williston is a very nice small town that has all the services but not much traffic.
Williston Crossings has a website with lots of photos and details but I would call them. They may offer you a couple free nights to look the facilities over. From what I saw I highly recommend this place. I really like this campground.
Below is a photo of their "back" entrance! The main front entrance is still under construction.
They have 2 trolleys that run back and forth into Williston but you could walk or bike over if you were energentic. It's only a couple blocks.
