Are you planning on seeing Salt Lake City on your way? The list of things to visit there is huge. There's a very nice KOA on W North Temple, a mile or so from the airport (but not under the flight path- can't hear anything). We wound up staying there for 6 weeks a couple of years ago when medical issues altered our plans. It was actually quite a nice place, and a rather pleasant stay. There's a restaurant a few blocks from there- also on W North Temple- called The Red Iguana. Kind of sketchy looking, but very well reviewed, highly regarded, and hugely popular (long lines at lunch in 100* heat). And not expensive, either! Bill themselves as "pre Hispanic Mexican". We went back a half dozen times. No waiting if you do the "late lunch" thing-- around 2:30. Absolutely great.
