I have been to Talihina SP riding atv's and the scenery is beautiful. There is also a horse riding area close to Honobia Ok (Big Foot Capital of the World). A closeby cg would be Clayton SP but not sure how big their sites are but the road inside of park is tight. Beavers Bend SP is also another alternative with more # of sites and for larger rigs. Also some boondocking to be had in the Weyerhouser land. Atv riding has been limited (except Talihina SP) in these areas but I suppose one could still ride horses.
