Wintering in Southern USA

We live in Southern Ontario and after the Christmas Tree is put away we are ready to head south. For the last five years we have travelled in our Cougar 5th wheel with solar and 1000watt inverter, boondocking and camping we have recently bought a new to us a 2014 Itasca Cambria 30J. Feel we are in a bit of a rut. All be it a good rut!
We head south from Southern Ontario stop at Nashville to flush out the antifreeze and load fresh water then head to the Port Aransas area of Texas hanging on the beach for 3 or 4 weeks.then its onto Seminole park and into New Mexico and or Arizona staying in State Parks or Boondocking. We love hiking

Any suggestions from other snowbirds or locals?

Just opinion here. I live in the NE part of Georgia and I don't tolerate high heat and high humidity, but I like this part of the US for other reasons. The winter months are the best months to go, see and do things here in south Georgia, south Alabama and all parts of Florida because the temperatures are moderate, the humidity is reasonable, leaves are still on the trees and the kids are still in school. Its possible to go see all sorts of things without overcrowding. If you are interested in anything aviation or space related, I suggest the east coast of Florida, starting in St Augustine and working your way down through Daytona Beach into Titusville and spend some time in Cocoa Beach seeing the history of the space program.
