Advice and Info Please

On our way home from Miami florida, we are thinking about making a stop in Cedar key florida. and or heading up I 95 and head into south carolina. My question is route from miami to cedar Key, up 75 and cut over or is there a scenic route? And i know nothing about I95.

I95 is toll road almost all the way, and on the East side of FL., not the way to go IMO.
Assuming you want to drive a scenic route, I would drive US 41 Wesbound from the Miama area, where there are many things to see and do along the highway, verses I75 where you only see the highway and side-ditches; that section used to be a toll road East to West and vica-versa, don't know now though.
When you reach Collier Blvd. area you begin to get into heavy traffic, which only gets heavier as you head North on US 41. That's where I switch to I 75 Northbound, as heavy traffic and many stoplights are not scenic, or relaxed driving.
From exit I 75 and FL 54 you may head West to pick up US 19 North along the coast. This route is approved for semi's and therefore safe for MH travel too.
That's about as scenic as it can get in Florida, it will be slow driving on the 2-lanes.

That's my long-past experience (2005) driving to Cedar Key, things may be drastically changed now.

post-script; Unless you have a new road atlas do not depend on I 75 exit numbers, they completely changed a few years ago. I would obtain a new 2016 version at a FL welcome center or just buy one.

Advice and Info Please

Since I am also not big on counting the hours on the interstate, my preference for Miami to Orlando or Tampa and beyond is highway 27 (Okeechobee Road). It is a good two lane road that goes up the center of the state through farm country and small towns. It starts as a city street near downtown Miami (I95) and you can pick it up from the Palmetto (FL826) or the turnpike. Lots of places to stop for lunch or a break.
