In a hurry or just on vacation ?
Looking to see sights on the way ?
Looking to avoid high mountain passes?

It's a vacation but not stopping along the way for sights , just steady driving 63mph stopping every two hours , don't normally do more than 300 per day , walmarts , rest areas are fine .

I would take 287 to I80 and west from there- I70 is a nightmare of traffic.

287 to I-80 to US 95. Be sure to fuel in Winnemuca, then north to SR 78 to US 20 to Bend. There is a lot of empty country north of Winnemuca. Top of your fuel in Winnemuca. I have not traveled SR 78 but it looks like a most direct route to US 20 at Burns, OR then west to Bend.
I have driven SR 140 from the junction with US 95 to US 395. It was a good 2 lane, lightly traveled, highway through more empty country. There is one fairly steep downhill of at least 5 miles when westbound.
We love to tour through open country and small towns so we would not hesitate to use either of these choices.
Have a great trip. Safe travels.
