County Fairgrounds. Most have RV Camping facilities.
Just look up on the web and call ahead.
If you're a member of organizations like the VFW, Elks, etc, most have large parking lots for overnight stays and appreciative of donations.
And there are Walmarts. Just call ahead and ask Asst Mgr if overnite parking is permitted. If tractor trailors fit, you should.

Many campgrounds on I-10 can accommodate rigs with combined 65' lengths. For example, Lazydays KOA Tucson and Ft. Stockton, TX RV Park. You might check www.campgroundreviews.com and the Good Sam RV Travel Guide available at bookstores.

Drive safely. Have fun!

KOA in Van Horn, TX. Cochise Terrace in Benson, AZ. Hilltop RV in Ft Stockton, TX. When we had our 5th wheel, we were 61' bumper to bumper. We were always looking and always successful at finding places so we didn't have to unhook for overnighters.
