I agree with Twogypsies on the 2-2-2 scenario. As for speeding, I too am a slow poke. I was going the posted speed limit last September and was passed by everything on the road, including tour busses.
It is such a long drive, I would consider another 2 day stop at the midpoint along the Ice a Fields Parkway. This gives you even more time to explore and enjoy.
