I don't know where you will be staring from in NC, but our 2006 trip started from Ashville up I 26 to I 81 to I 66 over to DC. We only made one stop over night because we wanted to see Natural Bridge.

Plenty of ez on and off campgrounds.

It was a beautiful senic drive right up through the valley with mountains on both sides.

If you go up I-95 you find campgrounds in NC at exit 61 (KOA), exit 90 (KOA), exit 98(RVacation), exit 171 (Carolina Crossrods).

Exit 98, RVacation is a nice park with friendly owners. train tracks nearby but not that bad.
