Batteries

Purchased a 2003 35' Dutchman Toyhauler, 30 amp with one battery. I have a 37' Avion 50 amp with two batteries.

Any advantage to adding a second battery or wasting money?

Only if you find yourself with a dead battery from use.

If your plugging in at every overnight stop, one will do.

If you want to dry camp and run the heat, 2 may cone in handy.

If you always run your rig on shore power, it's wasting money. If you plan to camp dry and want to reduce how often you need to run the generator, then extra batteries are handy. It's sort of like adding another freshwater tank. If you're always connecting to city water, then the extra capacity is never being used.
