Change Thermostat to Honeywell

We have a 2014 solitude 369RL want to change out the dometic CCC2 for a honeywell thermostat. what comes out of the wall is a CAT 5 wire. want a thermostat that you can program days of the week. any ideals

I have never seen a CAT 5 cable for a thermostat. I replaced my analog for a digital using the existing 5 wires.

I suspect the cat5 goes back to a control module somewhere

cat5 cable comes right out of the wall and plugs directly into the back of the CCC2 thermostat like a phone jack.

It's a proprietary digital format - there are no other thermostats that you can use. You can try calling them to see if any of their Marine A/C units have the features you need.
