I've heard that the best wheel deluxe chock. Then I heard they dont work on 16" tires (I will have a 32' 5th wheel)
If this is the case what would you recommed

I use the old model B&L chocks that goes between the wheels on the ground and expand to touch each wheel. I have 16" wheels. Work well for me. Got em at Camping World.

Yes, the metal expanding chock works great on the side of the trailer which is not on levelling blocks. I use one of those on one side, and a Chock and Lock lever chock which goes between the two wheels at the narrowest point (off the ground) on the other side (whichever side is up on blocks). Chock and Lock is also at camping world, and I think they are on sale right now.
