Well, from Flagstaff, you are going to have hills no matter what way you go, and go way out of your way. Take your time and don't drive it like you stole it, and you will be fine. Go on a sunny day and the road will be fine. Check road conditions before you leave. I believe Arizona road conditions is 511 on the cell phone.

What if we take Interstate 25 to Las Cruzes and Interstate 10 to Casa Grande which is our final destination ?

If that is the way you want to go, it is all interstate. It is all good road. Plan on a couple extra tanks of fuel going that way. But hey, that is the beauty of getting there. You can take anyway you want.

I do not know what your time frame is, but if you just go down 17 to 10, you will be there in about 4 or 5 hours. And that is dragging your feet. Going 40 to 25 to 10 via New Mexico might take you a couple of days. If you are not crunched for time, enjoy the ride!
