My wife and I were in the same boat about 8 months ago. We looked at every bunkhouse model out there since we have 6 year old twins and a 5 year old. We found a floorplan that we fell in love with. We kept searching and started comparing everything to the floorplan we liked, but nothing really beat that floorplan. It gave us almost everything we wanted, but no floorplan really gave us everything we wished for. We did sacrifice some things like a second half bath, but gained things like more counter space and a second sofa in living area. We finally settled on the Montana High Country 340BH. What we found helpful during our search is prioritize the floorplan features and identify what you are willing to do without and what you must have in the floorplan. Outside of that, everything else (components) are customizable. Our must haves were double fridge, open living room with seating for 5, ample counter space to prep food for 5, and finally bunks for 3 kids that didn't require storing or worrying about 1 kid stepping on another when they woke up. Bonus was the bunkhouse had the 3 bunks and a sofa for the kids. Hope this helps a little.
