New vs Used
So...in my search for a new home, I've got a quote on a new unit with everything I want, semi customized, and I've found a used unit with some of what I want. It would cost about $10k to get it to where I want it, but still wouldn't have full body paint. At the end of the day, I'm looking at a $30k difference in price (I think, haven't negotiated on the used yet) between the two. New unit has bumper to bumper warranty for one year, structural for 3, and fiberglass for 5. Used, of course, has none. Would you go with the new or used unit?

I think there are too many variables to answer that. Can you afford the extra $$ for the new? Are you willing to wait for exactly what you want? Paying cash or financing? If financing, what rate can you get on the new/used? Which floorplan do you like best? What's the condition of the used RV? What amenities do each have/don't have? How important are they to you? Are "some" enough? All new RV's have issues. Are trips to the dealer/factory for warranty work acceptable to you?
A lot more to consider than just the price difference & the warranty.

You haven't given enough details. Make/model/year of both. Full prices on both, the $30k differential is meaningless by itself. More details on condition of used and what the $10k is for, etc.

Will be financing. Price on the new one is 135k, used is 99k but needs about 6-10k to option correctly. New has full body paint and several nice to have options. Major expense on used is a built in generator - has gen prep and fuel tank. Both are toy haulers with the same floor plans. Other than generator, the used needs interior colors and flooring and other minor stuff. Yes, I can use my portable generators on the used one, but that kind of defeats the convenience of a built in with lot's of fuel in the toy hauler tank. MSRP on new is 187k, so it's a decent deal. New one is a 2019, used is a 2018.

What does the wife say?
IMO it would be worth the extra money to get what you want with one condition. You have to be able to pay the difference in cash.

Our story is out here on this forum. Short story... if you KNOW RVs... can you fix what breaks or depend on dealer/service folks? New will still be “lot bound” until your turn for repairs. Then wait in parts... then schedule your return to fix what broke and what failed again after the first visit.
Warranty is for initial cosmetic and device early-life failure. Following that, major failures are all you will want help with. Expect/Anticipate down time.
We bought a TT which cost $98k in 1999 and have put under $8k in it... total investment, $27k. Was out for 11 weeks over summer and only replaced a new water pump which failed (early-life failure). Oh... this summer we towed 8300 miles and averaged 12MPG from Texas, west to Nevada then north to Oregon. Next east to Montana then Yellowstone, Stugis, Rushmore.. New Mexico, Colorado, etc .
Our TT has APPRECIATED over last 6 years.

Personally I would always say “what if” so I would have to go with what I had originally wanted. Even if it cost more because I would always regret it.

How long will you keep it or expect to keep it? Any depreciation difference will be unnoticed if you have something for 10 years. NOT having the features and amenities you want will be a thorn for that 10 years though. FBP will run about 12-15K so if that's in the difference between the new and used factor that in also.

As long as it holds up, at least 10 years.

We just did something similar.
I had a specific new 5th wheel that I wanted. My wife did not like the price or the size. We looked at many similar units, but all were missing something or did not quite work. The worst part is these alternates were only about a 10% savings and not worth it in my opinion.
We just happened to come across a like new, used one that was close to what we were looking for. We ended with about a 40% savings of $30,000 and to use it was worth it.

new or used
You mentioned full body paint. We spent over a year looking for a new toy hauler. One thing we did find out is even if it is "full body paint" sometimes the decals are not painted on. Just saying check and make sure the decals are paint not decals.
I could notice by running my hand over it and feeling a slight bump. New units when full body paint was shown was $13-$15,000 more just for the paint, then the same decals.
We decided it was not worth the cost of the full body paint, so we added some upgrades instead of the dollars into the paint.

DRV toy hauler is one heavy beast, 24,000 GVWR as I recall. You'll need lots of truck for that one.
