I recently bought my truck and 5th and then took a 4 day weekend. Everything went well. Truck managed 11 MPG at 70MPH. Had some issues with long up hills but for the most part went well. Idid notice there was some wigle to the rearend over quick dips, but no lose of traction or control.
1)Will 1500# helpers correct this?
2)Would a cold air intake and/or a chip assist on the long grades?

What are you towing with your 1500? My initial concerns are the weight ratings vs the actual trailer weights. Having towed a 5th wheel with a Dodge 1500 before, you may be overloading the truck. While adding springs may stiffin up the rear, it will not increase your weight rating. If you are within your weight ratings, you could also consider airbags. I added them on my Dodge and they made a world of difference.

I am pulling a 1985 23 foot Komfort. Everything sits on a level plane. It seems to pull just fine without any problem. The truck has the Dodge towing package with tranny and oil cooler. One of the guys I work with also suggested airbags, I need to look into these.
