Generally, a bad idea. If the truck is level when towing now, it will sag in the rear when the 5th wheel is hitched up after you install a leveling kit, and the headlights will be pointing to the sky (and into other drivers' faces). You'll also add caster as the rear squats lower - excessive (as well as insufficient) caster can cause caster wobble, also known as "death wobble".

Most guys I see that run a leveling kit and do heavy towing end up complaining about too much sag. However, many of these same people end up adding more to their rear setup like springs or air bags in order to keep it level when towing. There are ways to avoid the excessive sag but it just depends on how committed you are to the leveling kit.

I say leave it stock. The engineers know what they are doing.
