First off how cold of conditions are you talking about? We have camped where the nighttime lows have been in the low 20's or upper teens, but the day time highs back in the 40's or 50's without doing anything special to protect the water supply. We have camped as late as Thanksgiving weekend here in Northern Ohio.

Last year early Nov. brought some very cold temps, so I had to winterize the first week in Nov. And never did get a chance to camp after that. You can still camp after you have winterized your RV, but you will have to find a campground that has heated shower buildings, along with water to wash dishes. In the fall if I see the night time lows that are going to get below the 25 -26 range and the next day is near freezing, I will go ahead and winterize. If the night time temps are going to be 27 and above only for a few early morning hours I'll chance it and not winterize. So far I have been safe.
