I can't accurately answer your above question, but since you are a professional mechanic, and you already have a heavy duty well-built truck, I would generally raise the caution flag regarding the standard industry-built toy hauler. They look good on the surface, but often lack strength under the skin. A good looking trailer that shakes apart on you after awhile will keep you busy fixing it, which is probably not what you want to do when you are off work from your full-time job.
In your part of the world, one of the best kept secrets in quality is Northwood's Desert Fox. They don't make a fifth wheel, but if it's just the two of you and bikes, well sometimes more isn't necessarily better, it's just more. (Even though the mighty Ram 2500 is capable, that big fifth wheel might get tiresome without the 3500's stability). Check out the build quality, especially the frame and suspension.
