If you can up that to 29ft (33 foot bumper to bumper) look at the Coachmen Freedom Express 292Bhds. U dinette, couch, either 3 bunks with outdoor kitchen or 4 bunks. No separate bathroom entrance but I think they may have a floor plan that does.
Not sure how much counter space is "plenty" but it is enough for me even when we take guests and sleep 6 adults.
It's 6140 lbs posted on the door. Depending on your truck could be 1/2 ton towable. We tow it with a 2015 Ram 1500 8 speed trans, 5.7L hemi 3.92 axle ratio. A F150 could be better as it has slightly higher payload and payload is our limiter rather than GCVW. It's just 2 of us and a small dog in the truck. This is not the "Liberty edition" which adds a good bit of weight in solid surface counter tops and porcelain potty as well as a fireplace and other features.
