OK, it was a Magic Chef oven I was working on , and the part I replaced was called a " Safety Valve ".
Picture below . The problem was as you describe , pilot light would stay lit but no main burner operation.
I'm still looking for the manual .

So in this picture does that probe get all super hot? Or is that not the burner

The probe , is the thermal couple , that tells the valve the pilot flame is burning and that allows the gas pressure to the main burner, by opening an internal passage in the valve.
Gas then flows out the end of the valve that's facing up in the picture into the burner tube.
EDIT: Here's an old post with similar issues, member describes his fix of low flame at the pilot. The back of your oven should look similar, to pictures in this post.

Now if I want to go for the easiest fix of trying to make the oven work without having to take any screws out and take anything apart what's the first things I can do? Easily been that probe so it's touching the flame? But also remember is there a reason why as I would turn up the temperature knob for the oven the pilot flame would get slowly brighter and then just go out once I get stewed Royal?

I mean I can understand if the flame or the pilot stays lit and nothing was happening but as I turn up the oven knob it's slowly gets bigger but then it goes out no matter what if I go to high on the knob with temperature.
