This may be painfully obvious, but don't stand under the turkeys while they are roosting. They can "do their business" just before they take off out of the tree.
If you've ever deer hunted and gone into the woods just before dawn and stood under your favorite tree waiting for sunrise and that big buck, and you hear this noise above you and you start to look up.....keep your mouth closed!!! To say I was startled is an understatement, and just cause it falls from the sky, doesn't make it Holy.

try putting some metal roasting pans on the roof- they make noise and blow in the wind; also, pieces of old water hose cut up work like rubber snakes... just saying

Are turkeys scared of owls? Because if they are you might get one of those fake owls and put it up there?

Bird scare tape....you can get it HD. It is Mylar holographic tape that shimmers. We tie it on our boat to keep the blue herons, gulls, etc. off and it works very well. A roll of it is under five dollars and will last for years.

With some sweet potatoes - a couple cans of cranberry sauce - and a few cans of turkey gravy (does anyone use that other than to scare turkey?).

That should do it.
