I am finally convinced that even though my co-pilot and I have been successfully communicating with walkie talkies, we would be more efficient (me as the driver, primarily) with a headphone setup. Can anyone recommend some brands/models for us to check out?

Many walkie talkies can take a plug in headphone, Depending on the unit it can be a cell phone headset or a special communications headset.. My Radio Shack FRS radio takes the same headset as my Yesau FT-51R ham rig.
That said. I never use the headset.

My wife and I found that a headset greatly improved our communication while parking -- she parks, I communicate. We've been using the RV headset from RV Headsets and find it to be just what we need. No hands needed and clear communication.

Right. RV Headsets. That's what we use, too.
Works just fine and stays in a really nice pouch just inside the door for quick access when needed.

We tried the headset route and gave-up....it was easier and simpler just to rely on hand signals. No (hopefully) misinterpetation, asking for repeating, etc.

My backup camera has a built in Mic. DW talks, I listen, I ask no questions, and I do what she says. No problems so far. Works the same way as when she is in the Co Pilot's seat. LOL
