I know about the driver not being allowed to see the TV while going down the road, but I did a Google search and came up with nothing about a sliding TV mounting. Anybody know where these are sold? Thanks.

Yes, if you plan on mounting on a horizontal shelf. I purchased and installed model TV40-001H made by MOR-RYDE
MOR/ryde - Products - Aftermarket - TV Mounts If you google "mor ryd tv mount" you will find vendors.
These mounts are made specifically for RVs. It locks in place while riding. There is a latch that you lift to release, that allows you to pull it out about 12 inches where it also can lock in place. You can also rotate about 45 degrees left or right and also tilt up and down. Cost about $150. Easy to install (about 4 bolts on the bottom and the standard VESA plate to attach to the TV.
