I store our unit with the battery disconnect set to cut off power to the motor home. When I do this however, the CO detector in the bedroom begins beeping because of power cut-off. Is there a way to silence the darn thing?

The only way that the CO detector could continue beeping is IF it had an internal battery. Now perhaps that battery is going into a low-volt condition there by letting you know to replace the battery similar to a smoke detector.
When I disconnect the coach power my CO detector goes "Beep" and the note falls off into silence.

In many coaches the co detector is connected to the chassis battery and if it gets low on power the detector will beep. On my motorhome the one time the co detector was beeping I removed it from the wall disconnected the power to do a reset charged the chassis battery and all was well.

It does stop beeping after the batteries are reconnected via the disconnect switch. It takes a few minutes so I suspect it has an internal battery. The unit says it's not serviceable by the user though. It's not a big deal - just annoying when i get the unit out of storage for a trip.

Un plug it, replace battery in detector and plug it back into coach wiring harness.
