Normal bakeware. Metal pans for the convection use & microwave-safe items for microwaving.

+1. A Convection oven is just a small electric oven. Use metal or pyrex bakeware that's sized appropriately, keeping in mind that most ovens have a turntable to rotate the pans or cookie sheets to ensure even baking and browning. We used to carry the disposable tinfoil square and rectangular pans, but realized we could just carry "real" metal pans that are more sturdy and more eco-friendly since you just wash and use again!
If microwaving, plastic or glass or silicone.

Use the supplied rack to put you pans on. They don't want sit on the bottom of the oven.

Convection Microwave questions
The usual suspects work fine in a convection, subject only to size limitations.
How-to instructions always caution you to leave plenty of clearance room around the cookware for air circulation, but I'm not sure how truly critical this is. I have a few half-sheet pans I use when making batches of cookies. They fit the oven with only about 3/4 in clearance around each edge. But they work just fine and the cookies come out perfectly-- as evidenced by how few actually make it to the original event!!

Hello Folks,
Hope you dont mind me jumping in here as I'm about to purchase a MH and it might come with a convection oven so if you dont mind I have a couple of questions.
The wife and I had never used a convection oven so she is a little bit afraid to get a MH if one has it in there so my question is do they really work as well as the conventional (gas) oven?
And, can it brown a turkey/chicken like the picture always shows Thanks, Jake

There's nothing magical or mystical about a convection oven. No radio waves, cosmic rays, lasers, or Flash Gordon death rays. Just plain old heat, but applied more efficiently.

Once DW learned to use the micro/convection in the motor home she insisted on getting one for the stix and bricks. Now she can not remember how she lived with out one.
