Diesel cooktop
We currently have a Thor Tuscany all-electric (except Aqua-Hot) with an induction cooktop. The cooktop is 110v@15a and gets rather wimpy when both burners are in use. According to the owner's manual, the unit power-shares between the two burners when both are on. Looking for solutions, I've considered...
LP gas: Not an option. There is no LP in the coach and we're not going to add it.
Replace cooktop with a 220v equivalent: Possible, but would require rewiring and we would then have to be plugged into 50a power (30a is 110 only) or run the generator whenever cooking.
Replace cooktop with a diesel cooktop: Hmmm... This MIGHT be an alternative. There are two brands available that I can find. But information is rather skimpy. Does anyone have any experience with these?

Last thing in the world I would want in my kitchen is stinking diesel!
Get a portable electric cooktop.

The obvious solution IMO is to add a new 15A circuit and breaker, for the 2nd burner.

You may not be able to get 240 volts from the generator, but not out of phase.
Agree with Ray,IN, split the cooktop if possible.

Agree^^^^
Separate 120V AC power to each burner
Add 15A CB......new wire to stove top and connect to one of the burner controls
Replace current 15A CB with a slimline/tandem 15A CB.
Then run the new wire

Pick up one of these portable units, and you can use it on a countertop or even outside if you are cooking something that spatters a lot.
