What is the actual temperature on gas vs electric.

Maybe you can adjust the setting as one system works better the the other ?

The inside is freezing up no matter where we set the thermator that sits on the
coils

If you mean the food products are themselves freezing and they are not too close to the fins on the evaporator; the the relay that controls the heating element is probably stuck. You could try accessing the control board and tapping on the relay with the butt end of a screwdriver to see if you can break the weld of the points in side. If not, then a new control board would be in order.
If the food product is not freezing up but the evaporator fins are; this is normal in humid climates via opening of door. Make certain the doors are closing properly and check the drain tube for the plug that hold a vapor barrier and keeping hot humid air out.
Let us know what you find. Good luck.

Frozen coils inside can be from to much moisture in the food compartment and poor air currculation
