As you will soon see there are different opinions on how level you should be for the refrigerator.
In the past 25 years we've not worried about it as you are usually fairly level at most campgrounds. So my answer is not to worry about it a lot.
The ice maker should not spray inside the freezer and I've never seen a complaint on here about that kind of problem.
However, it will drop the load of ice it just made in the middle of the night and scare the snot out of you.
We don't hook ours up for just that reason.
Welcome to the forum and enjoy your new toy.

Can't help you on the switches.
I've always had Norcold refrigerators so I'm not familiar with their switch labeling.

Pressing down the i on the climate control switch will turn on a low wattage heater tape for the mullion; to prevent sweating in high humidity weather.
Pressing down the 0 on the ambient switch will be for the normal operation of the unit until you are using it in sub freezing temperatures. When on (i) this will keep the inside light on when in use.
The more level the coach is, the longer the life of the refrigerator, even though it can operate slightly out of level.
