Help are we doing something wrong or is there something wrong with the unit.
When we turn on the microwave for over 10 min, and then want to use it again for something else after 10 min when we take something out of it it turns off and we have to wait at least 5 min to use it again, also the convection oven seems to cook way to fast according to the manual we have , ie potatoes at 1 hr @350 will finish in about 25 min and then be over cooked.

It sounds like the unit is not cycling on the desired temperature setting and once it trips out the high limit safety thermostat it takes time to cool down enough to use. Recommend you call Sylvania or local appliance repair familiar with micro/convection ovens for service. Keep us posted.
