We have the Norcold Fridge, Model N842IMR in our MH and run it 24/7 during the camping season. On a setting of 5-6 the freezer will usually stay @ 0 to minus 5-10 degrees and the box @ 32-38 degrees. I have on occasion noticed that the box temp seems to rise every couple of days to around 40-45 degrees for several hrs and the freezer will go to maybe +5 or 10 degrees before everything goes back down. Do these fridges have some type of self defrosting mode that they automatically go into periodically or is my unit possesed? I might add that I've not seen the inside fins ever get excessive frost buildup on them.

RV refers do not have a defrost mode at all. Frost/ice on the fins is a result of humidity in the air and the amount of times the box is opened. Bad seals can also cause a frost buildup.
The box/freezer temps can go up on hot days or even if the side of the coach with the refer is getting full sun. Another cause of high temps is not moving enough air across the coils on the back (outside the box). In really ot temps you can put a fan in there directing air flow up toward the upper vent.

Hope all this helps you somewhat.

What you said makes sense and will give me a reason to possibly add/wire a muffin fan inside to the light wiring that activates/deactivates when the door is open/closed and another in the outside compartment. I know that rv fridges don't have a defrost mode unless done by the user but I could swear that I read somewhere that some type of heating process occurs every 48 or so hrs in these fridges.

If you want to put a circulating fan inside the refer check out ebay. Go to Ebay motors ans search for "RV Refrigerator fan". You should be able to pull up one that sells for $13.99 and is 2 fans in a blue "case". The guys that puts these together is in TN. I recently bought another one from him as the first one only lasted 3 years of continuous use. I guess you just can't buy quality anymore (haha). Anyway, his clips on the fins and a single wire goes to the refer light. It's a good product. Good luck

Thanks for the fan info. I remember seeing those in past posts and went and ordered one the other day. The battery operated ones from CW don't move very much air and are rather poor quality. I've also got one of the Valterra thermostatically controlled fans for the outside compartment if I could find time to install it.
