It is a gravity system, water will not flow uphill. I suspect that water in the sink, tub and tank are close to the same elevation and your tank was raised so its top is above the elevation of the tub drain.

There is no damage to the gray tank....as soon as my hubby released the plumbing from outside of the gray tank, the depression from the incidence, which honestly was barely noticeable....we looked at it multiple times before we even noticed it....it came back out to it's normal position.

Everything visually looks proper.

I don't believe that the drain line into the tank is correct. As has been pointed out, it protrudes into the tank about 1/3 of the way. That is too coincidental, as far as I'm concerned. 2 of the 3 drains in your earlier pics are that way. As soon as the water level reaches that point (at around 20 gallons or so), the shower drain, which is also the grey tank vent, is blocked. The kitchen sink drain is the only one that is correct.

As for the draining issue, I think that's likely a gravity issue is all, and unrelated to the backup at 2/3 tank level. You may simply have to lean your rig to the driver side when draining.

OK guys, is this the clue to solving this issue? Plunging the bathtub should simply push water down through the drain pipe (or up through a tub overflow if there is one). Do you think there is a blockage between the tub and before the gray tank?

Disassemble the valve right there and probe into the tank. If all is open, then fix the vent that fell lower than the top of the tank.

The water drains quickly from the tub with no issues.......

The seal around the bathtub drain we discovered from plunging is some kind of soft mushy goop that you can squish with your fingers...the plunging caused it to open up there....and the plumbing under the tub drain, we think the water got around it and leaked under the tub.....we think....
