Residential thermostats are 24v, RV thermostats are 12v. You can't run a normal thermostat in an RV because of the power.
You have to use a thermostat that has batteries, normally AA size, or a 12v RV thermostat. Most people are replacing the Dometic thermostats with the inexpensive Hunter thermostats that are digital and run on batteries. The Hunters have no way to control a two speed fan so you wire a little switch to the fan connector on the tstat and run the fan speed hi and low wires to the switch. When you wire up a battery powered thermostat in an RV you do not wire up the red wire from the wall, this the 12v power. Tape it over. If the old thermostat controlled the heater you can wire it up to the new one.
Yellow is the A/C
White is the heater
Black is ground
Depending, blue, green , orange are fan speed colors
How to do it --- Hunter Thermostat

It's not absolutely necessary to add the switch. One could always just wire the t-stat to either the high speed wire (usually the best choice to avoid evaporator icing) or the low speed wire and just run the selected speed only.
