If your going to live in it in AB.,Canada the RV needs to have a winter option built in it with added insulation and thermal pane windows sealed insulated compartments and heating system that will supply heat to compartment tank areas.
You have a 2012 RV the thermostat is for the furnace control and probably for your AC system and to change out to a different control is going to cause you more problems than its worth and may not work anyway with furnace control board.
Looking at the Brochure for your RV its well built and for 0* TEMP's.
The fridge will work but you will need to disconnect any water lines to a ice maker and drain them lines and remove the water from water valve in vent area behind fridge.
You could cut down vent area open space with some foam board but leave some air space for heat to vent in warmer days.
Water feeds would have to be heat wire wrapped if camp ground supplies water????
Your sewer drainage would need to be connected only when you have to dump and may need to insulate sewer water compartment floor with insulation.
Doesn't your owners manual give you any advise on winter camping seeing they say the RV is 0* tolerance in their brochure.
Maybe others will have some suggestions to help you out, I have camped in winter weather, with well insulated coach, but not for prolong periods which will be different.
