Pork, depending on the cut, traditionally (depending on yer butcher) are fairly low fat, very lean so they dry out easily when cooked, ham's and bacon do not do this because they are cut from higher fat areas of the pig, the rump and bottom of the belly.

By wrapping the meat in bacon and placing it on a tin to hold the fat near the pork, you moisten and flavor the pork with the bacon's fat, both adding flavor and increasing the juiciness of the meat at the same time.

It works kind of similarly to placing large pineapple slices on top of pork steaks while BBQing, the sugar and juice leech into the meat underneath, moistening and sweetening it.

I doubt Dunner has, as he's lactose intolerant, but I have and as I said earlier, it left me wanting, much like the bacon sundae that Denny's had.

What hasn't left me wanting was the bacon maple bar from voodoo donuts, which is a classic maple bar with a pieces of fresh bacon on top.

And a good bone-in Rib Eye or T-bone generally tastes more flavorful than Filet Mignon .

Just came back from a weekend of eating many things, picked up some more Cottswald Cheese and some soft cheese that I can't remember the name of that's sheep milk based and flavored with orange zest and pecans, really tasty stuff .

Now, thanks to all the little "Spam" sign waving emoticons, I have a craving for freshly fried spam and eggs .
