My ex's father would make maple syrup every spring and we all would assist at the evaporator. High tec process. You keep a fire burning 24/7 during the evaporating, keep the sap flowing in a rate that the sloped evaporator never gets uncovered and the boil off ratio is between 36:1 and 40:1 and you get good syrup.

If you are buying MAPLE SYRUP the ingredients section of the packaging (can, bottle or wax paper thing-a-me) should read maple sap and nothing else. I have seen all kinds of concoctions being passed of as genuine maple syrup and they lie.

BTW I'm with Dunner here, gimme Mrs Butterworth any time. BTW I may be wrong on the ratios but should be close.
