They always seem to me have a stickiness about them and a bit of fishy or nautical (lol) quality. The meat is a little sticky to the fingers or palate. In a blind taste test - I feel confident I could correctly identify - fried catfish - fried oysters - fried shrimp - fried okra - fried rattlesnake - chicken fried steak - chicken fried chicken - fried jalapeños - fried frog legs - fried mushrooms - fried cheese - fried corn - fried crab claws - fried soft shelled crabs - fried tofu - fried onion rings - fried tater tots - french fries - and pan fried Chinese dumplings.
